Careful grape selection during its manual harvest. Once in the winery, a process of delicate destemming and cooling takes place before pneumatic pressing. This is followed by fermentation for approximately 7 days, adding selected yeasts, with a controlled temperature of 15°C. Fermentation is interrupted by using physical methods in order to obtain low alcohol content and a large amount of residual sugar.
